Homemade Snickers Loaf (Soft, Gooey and Chocolatey Treat)

If you love chocolate, caramel, peanuts, and peanut butter this Snickers Loaf is going to be your new favorite dessert! It’s soft, sweet, a little crunchy, and tastes just like a Snickers bar only in cake form. I made this recipe gluten-free and dairy-free, but it’s super easy to change up based on what you have at home. Let’s get baking!

Method

Prepping the Oven and Pan

Before you start mixing your ingredients, first things first preheat your oven to 350°F (175°C). This ensures it’s nice and hot by the time your batter is ready to go. Then, prepare your loaf pan by either greasing it with a little oil or lining it with parchment paper. This step helps your loaf come out easily after baking, with no sticking or crumbling. If you skip this, your loaf could get stuck, and nobody wants to lose half their dessert to the pan!

Mixing the Wet Ingredients

In a large mixing bowl, combine your milk, oil, and eggs. Whisk them together until everything is smooth and well blended. This part is super important because it helps make the base of your batter nice and even. I used almond milk and avocado oil, but you can use whatever milk and oil you have on hand just make sure they’re at room temperature so they mix well.

Adding the Dry Ingredients

Now it’s time to bring in the dry stuff! Add in your flour, sugar, cacao powder, and baking powder. I used a gluten-free 1:1 flour from Bob’s Red Mill and coconut sugar to keep things a little healthier and allergy-friendly. Stir everything together just until it forms a smooth, thick batter. Be careful not to overmix you want all the ingredients combined, but mixing too much can make the loaf dense instead of soft and fluffy.

Folding in the Mix-Ins

Once your batter is ready, it’s time to make it taste like a Snickers bar! Gently fold in the diced caramels and roasted peanuts. This means you should stir them in softly with a spatula so they’re evenly spread throughout the batter without breaking down. Make sure your caramels are cut into small pieces they’ll melt better this way and won’t sink to the bottom.

Preparing the Batter for Baking

Pour the finished batter into your prepared loaf pan. Use a spatula to spread it out so it fills the pan evenly from corner to corner. Now comes the fun part add dollops of peanut butter on top. You can swirl it in a bit or just leave it in soft little blobs that melt into the top while baking. If you’re feeling extra, sprinkle a few more peanuts on top for some extra crunch and flavor.

Baking the Loaf

Place the pan in your preheated oven and bake for 36 minutes. Every oven is a little different, so keep an eye on it near the end. To check if it’s done, insert a toothpick or knife into the center of the loaf. If it comes out mostly clean (a few moist crumbs are okay), it’s ready! The top should look a little cracked and glossy from the peanut butter.

Cooling Before Slicing

When it’s done baking, take it out of the oven and let it cool in the pan for at least 10 minutes. This part is key cutting into it too soon can make it fall apart. Letting it rest allows everything to settle and firm up, making it easier to slice and keeping that beautiful loaf shape. Once cooled a bit, slice it up and serve warm, or store for later!

Ingredients

  • 1 cup all-purpose flour (I used gluten-free 1:1 baking flour from Bob’s Red Mill)

  • 1/2 cup granulated sugar (I used coconut sugar)

  • 3 tablespoons cacao powder

  • 1 teaspoon baking powder

  • 1/2 cup milk (almond milk worked great!)

  • 1/4 cup oil (I used avocado oil)

  • 2 eggs

  • 1/3 cup diced caramels (I used Cocomels)

  • 1/3 cup diced roasted peanuts

  • Peanut butter (for topping yum!)

Directions

  • Preheat your oven to 350°F and either grease your loaf pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the milk, oil, and eggs until everything is smooth.
  • Add in the flour, sugar, cacao powder, and baking powder. Mix it up until the batter is nice and even.
  • Gently fold in the diced caramels and peanuts. These little pieces will melt and crunch in every bite!
  • Pour the batter into your prepared loaf pan. Use a spatula to spread it out evenly.
  • Drizzle or dollop some peanut butter on top, and if you’d like, toss on some extra peanuts for more crunch.
  • Bake for 36 minutes. You can check if it’s done by poking the center with a toothpick it should come out mostly clean.
  • Let your loaf cool for at least 10 minutes before slicing. Trust me, it’s worth the wait!

Notes

  • Don’t overmix the batter! Just stir until the ingredients are combined.
  • Let the loaf sit for 10+ minutes after baking this helps it hold together when slicing.
  • Make sure caramels are diced small, so they melt evenly without sinking.
  • Use a lined or greased loaf pan no one wants a stuck loaf!

Serving Suggestions

  • Eat it warm with a scoop of vanilla ice cream.
  • Add a drizzle of chocolate syrup on top for extra yum.
  • Serve with a glass of cold almond milk or your favorite hot drink.
  • Slice it up for a fun lunchbox treat or a party snack!
