BELGIAN WAFFLES

Hi friends! Today, I’m sharing one of my favorite breakfast treats Belgian Waffles! These waffles are fluffy, golden, and totally delicious. I made mine gluten-free and used coconut sugar and almond milk to keep it light and tasty. You can make these any morning you want something warm and cozy with a little crunch on the outside and softness on the inside. Let’s get wafflin!

Method

Whisking the Wet Ingredients

To start, grab a medium-sized mixing bowl. Crack in the two eggs and pour in the 1/2 cup of almond milk (or whatever milk you’re using). Then, add a splash of vanilla extract this gives the waffles a sweet, cozy flavor. Using a whisk, beat everything together until it’s smooth and well combined. This step helps create the base for a light and fluffy batter, so don’t skip the whisking!

Adding the Dry Ingredients

Next, it’s time to bring in the dry ingredients. Add 1 cup of all-purpose flour (I used a gluten-free version!), 1/2 teaspoon of baking powder, and 1/4 cup of coconut sugar to the bowl. Gently whisk the dry ingredients into the wet mixture. Make sure to mix just until everything is combined don’t overdo it! The batter should look smooth, with no big lumps, but it’s totally okay if it’s not perfectly silky. Overmixing can make your waffles a bit dense, and we want them light and fluffy!

Heating the Waffle Maker

Before cooking, preheat your waffle maker. Every waffle maker is a little different, so check your machine’s instructions if you’re not sure how long it takes to heat. A properly heated waffle iron is key to getting those beautiful golden brown waffles with crispy edges. While it’s heating up, lightly grease the plates with non-stick spray or brush on a little oil or melted butter. This step makes sure your waffles won’t stick and come out clean and pretty every time.

Pouring the Batter

Once your waffle maker is nice and hot, it’s time to pour in the batter. This recipe makes two large waffles, so you can either pour all the batter at once if your machine fits that size, or do it in two batches. Gently spread the batter around to cover the surface of the waffle maker but don’t overfill! It’ll spread out more as it cooks.

Cooking the Waffles

Close the lid and let the waffles cook. Most waffle makers have an indicator light or beep to let you know when they’re done, but a good tip is to watch the steam. When the steam starts to slow down, that usually means your waffle is cooked through and crispy. For me, it took around 4 minutes, but your cook time might be a little different depending on your waffle maker. Try not to open the lid too early. Patience pays off!

Serving the Waffles

Once they’re golden and perfect, carefully lift the waffles out of the iron using tongs or a rubber spatula. Serve them warm right away. I topped mine with a pat of butter and Walden Farms Original Pancake Syrup. Seriously, they smelled amazing and tasted even better!

Ingredients
