Blueberry Cake Bars (Easy Soft & Buttery Dessert Bars)

I don’t know about you, but there’s something magical about blueberries in baked goods. These Blueberry Cake Bars are soft, sweet, and packed with juicy blueberries! They’re super easy to make, and I promise your kitchen will smell amazing while they bake. This recipe is simple, fun, and perfect for both kids and grown-ups who want a treat that’s not too fussy but still delicious.

Method

Preheat & Prep

First things first preheat your oven to 350°F (175°C). This gives your oven plenty of time to get nice and hot while you prepare the batter. Next, take your 8×8 baking pan and grease it well using either butter or a non-stick cooking spray. Greasing the pan makes sure your blueberry cake bars come out easily and don’t stick to the bottom or edges after baking. If you want extra insurance, you can also line the pan with parchment paper, leaving a little overhang to lift the bars out once they’re done.

Mix Wet Ingredients

In a large mixing bowl, combine your wet ingredients milk, melted butter, and eggs. Whisk them together until they’re fully mixed. Make sure the melted butter isn’t too hot when you add it, or it might start to cook the eggs! You’re looking for a smooth, slightly frothy mixture. This step builds the foundation of your batter and helps everything blend nicely later on.

Add Dry Ingredients

Now it’s time to add the dry ingredients to the bowl. Gently pour in the all-purpose flour, almond flour, baking powder, and sugar. Stir everything together until the batter becomes smooth and consistent, but try not to overmix. Overmixing can make your bars tough instead of soft and fluffy. Stir just until you no longer see dry flour.

Blueberry Time

Here comes the fun part blueberries! Before you toss them into the batter, give them a light dusting with a tiny bit of flour. This step is like a secret baking trick: it helps the berries “float” in the batter instead of sinking to the bottom during baking. Gently fold the floured blueberries into the batter with a spatula or spoon. You don’t want to smash them just a soft fold will do.

Bake

Once your batter is ready, pour it into your greased (or lined) 8×8 pan. Use your spatula to spread it out evenly so it bakes consistently. Place the pan in the preheated oven and bake for 25 minutes. Every oven is a little different, so I recommend checking at the 23-minute mark by poking the center of the cake with a toothpick. If it comes out clean or with just a few crumbs (no wet batter), it’s ready!

Cool & Drizzle

When your cake bars are done baking, take them out of the oven and let them cool in the pan for about 10–15 minutes. This makes them easier to slice and keeps the icing from melting too fast. While they cool, you can make a simple glaze by mixing powdered sugar with a splash of water (just enough to make it pourable). Once the bars are slightly warm or at room temperature, drizzle the icing on top for that perfect sweet finish!

Ingredients

  • ¾ cup all-purpose flour (I used Bob’s Red Mill Gluten Free 1:1 Baking Flour)

  • ⅔ cup almond flour

  • ½ cup granulated sugar (I used coconut sugar)

  • 1 tsp baking powder

  • ½ cup milk

  • 4 tbsp butter, melted

  • 2 eggs

  • ¾ cup wild blueberries (fresh or frozen work fine)

  • Optional icing: powdered sugar + a splash of water

Directions

  • Preheat & Prep: Turn on your oven to 350°F. Grease your 8×8 baking pan with butter or cooking spray.
  • Mix Wet Ingredients: In a large mixing bowl, whisk together the milk, melted butter, and eggs.
  • Add Dry Ingredients: Slowly stir in the all-purpose flour, almond flour, sugar, and baking powder. Mix until smooth.
  • Blueberry Time: Gently coat your blueberries with a little flour (this keeps them from sinking). Fold them into the batter.
  • Bake: Pour the batter into your prepared pan and spread it out evenly. Bake for 25 minutes, or until a toothpick comes out clean.
  • Cool & Drizzle: Let it cool a bit, then drizzle with a quick icing made from powdered sugar and a tiny splash of water.

Notes

  • Don’t overmix the batter or your bars could turn out dense. Stir just until combined.
  • Coat the blueberries with flour before adding them in that way they won’t all sink to the bottom.
  • Watch the bake time! Every oven is a bit different, so start checking around the 23-minute mark.
  • Let the bars cool before icing so the drizzle doesn’t melt and disappear!

Serving Suggestions

These cake bars are yummy all by themselves, but here are some ways to make them even better:

  • Serve warm with a scoop of vanilla ice cream
  • Add a dollop of whipped cream on top
  • Pair with a glass of cold milk or a cup of tea
  • Cut into mini squares for a lunchbox treat!

Fun Fact

Did you know wild blueberries are smaller and have more flavor than regular ones? They also have more antioxidants which means they’re little berries with big power!

Conclusion

These Blueberry Cake Bars are one of my favorite quick bakes light, fruity, and just sweet enough. They’re perfect for a snack, a picnic, or even breakfast (hey, they have fruit!). I hope you give them a try and fall in love like I did. If you do, don’t forget to share your version and tag me I’d love to see how yours turn out!
