Healthy Blueberry Cheesecake Bars (Simple No-Bake Dessert)

If you’re looking for a sweet treat that’s creamy, fruity, and just the right amount of cool, you’re in for a yummy surprise! These Blueberry Cheesecake Bars are one of my favorite no-bake desserts. They’re colorful, soft, and bursting with blueberry goodness. The best part? You only need a few simple ingredients, and they don’t take much work!

Method

Line It Up

To start, take your 8×8-inch baking dish and line it with parchment paper. This step is super helpful because once your bars are frozen and ready to eat, the parchment paper makes it really easy to lift them out of the pan without any sticking or mess. It also helps the crust stay together when you slice the bars later on, so don’t skip this part!

Mix the Crust

Next, grab a large mixing bowl and add all of your crust ingredients: almond flour, coconut flour, granulated sugar, nut butter (like almond butter), and almond milk. Stir everything together really well until it forms a thick, dough-like mixture. The dough should be soft but not too sticky. If it feels a little dry, you can add just a splash more almond milk. Once it’s ready, press the crust mixture into the bottom of your parchment-lined baking dish. Use the back of a spoon or a spatula to spread and flatten it evenly, making sure it covers the whole bottom. This will be the base for your cheesecake layer, so you want it nice and smooth.

Whip the Filling

Now it’s time for the yummy, creamy filling. In a separate bowl, add your softened cream cheese, mashed blueberries, vanilla yogurt, and sugar. If you’re using frozen blueberries like I did, make sure you warm them a little first so they mash easily and blend well. Using a hand mixer or stand mixer, blend everything together until the mixture becomes smooth, thick, and creamy. It should have a light purple color from the blueberries and no lumps at all. This is where the magic happens this mixture is going to give your bars that dreamy, cheesecake-like texture.

Layer & Freeze

Once your filling is ready, pour it right on top of the crust in your baking dish. Use a spatula to spread it out evenly, making sure it reaches all the corners. Smooth the top as best you can it’ll freeze just the way you leave it, so try to make it nice and pretty! Now place the dish in your freezer and let it set for at least 3 hours. If you have time, I actually recommend freezing it overnight to make sure the bars are completely firm and easy to slice.

Slice & Enjoy

When the bars are fully frozen, take them out of the freezer and carefully lift them out of the dish using the edges of the parchment paper. Place the whole slab on a cutting board and use a sharp knife to slice them into 9 bars or more if you want smaller bites. Let them sit for a minute or two before eating, just to soften a little. Now they’re ready to enjoy cool, creamy, fruity, and totally delicious!

Ingredients

  • Cheesecake Filling

  • 8 oz. plain cream cheese (I used @kitehillfoods)

  • 1/3 cup mashed blueberries (I used frozen ones and warmed them a little)

  • 1/4 cup vanilla yogurt (I used @kitehillfoods)

  • 1/2 cup granulated sugar (cane sugar works great)

  • Crust

  • 1/2 cup + 3 tbsp almond flour

  • 1/2 cup coconut flour

  • 1/4 cup granulated sugar

  • 1/4 cup nut butter (almond butter is my go-to)

  • 1/2 cup almond milk

Directions

  • Line It Up: First, line your 8×8-inch baking dish with parchment paper. This helps the bars come out super easy later.
  • Mix the Crust: In a big bowl, stir together all the crust ingredients. Press the crust mixture evenly into the bottom of your dish. Make sure it’s nice and flat!
  • Whip the Filling: In another bowl, use a hand mixer (or a stand mixer) to mix all the cheesecake filling ingredients until it’s smooth and creamy.
  • Layer & Freeze: Spread the creamy filling over the crust. Smooth it out with a spatula so it looks pretty. Then freeze the whole thing for at least 3 hours (I actually leave it overnight).
  • Slice & Enjoy: Once it’s frozen, take it out and cut it into bars. Enjoy your chilly blueberry cheesecake treat!

Notes

  • Don’t skip the parchment paper! It makes removing the bars way easier.
  • Make sure your blueberries aren’t too watery or they can make the filling runny.
  • Blend the filling really well if you want it smooth, not chunky.
  • Don’t try to cut the bars before they’re fully frozen, or they’ll be mushy!

Serving Suggestions

  • Top with fresh blueberries or a dollop of whipped cream.
  • Pair it with a cup of almond milk or hot tea.
  • Serve it on a fun plate with a little fork for extra fancy vibes.
  • These bars are great for birthday parties, picnics, or just a happy weekday treat!

Fun Fact

Did you know? Blueberries are one of the only naturally blue foods in the world. They’re full of antioxidants, which are like superheroes for your body!

Conclusion

These Blueberry Cheesecake Bars are fun to make and even more fun to eat. They’re creamy, fruity, and so simple, even kids can help make them! Whether you’re treating yourself or surprising your friends and family, these bars will bring smiles all around.
