Easy Funfetti Cake Cookies (Soft & Colorful Cookie Recipe)

Who doesn’t love sprinkles?! These Funfetti Cake Cookies are soft, sweet, and full of color perfect for a birthday party, afternoon snack, or just because it’s Tuesday. I made these cookies using gluten-free flour and almond milk, but they’re still full of flavor and super easy to make. And the best part? You only need one bowl!

Let’s bake something fun and festive together!

Method

Preheat the Oven & Prep Your Pan

Start by preheating your oven to 350°F (180°C). This gives your oven enough time to reach the perfect baking temperature while you prepare the dough. Next, grab a baking sheet and line it with parchment paper or a silicone baking mat. This step helps the cookies bake evenly and prevents them from sticking plus, it makes clean-up so much easier!

Mix the Wet Ingredients

In a large mixing bowl, crack the egg and add the almond milk. Use a whisk or spoon to mix them together until smooth. You want the mixture to look light and even this is the base that will help hold your cookie dough together.

Add Dry Ingredients + Sprinkles

Now it’s time to add the magic! Pour in your all-purpose flour, almond flour, baking powder, and cane sugar. Gently stir everything together until all the dry ingredients are fully combined with the wet mixture. The dough will start coming together and become soft but workable. At this point, fold in the colorful sprinkles. This is what gives your cookies that funfetti pop! Don’t stir too hard, just gently mix until the sprinkles are spread throughout the dough.

Shape the Cookies

Once your dough is ready, use your hands or a spoon to divide it into 10 equal pieces. Roll each piece into a ball. If the dough feels a bit sticky, you can chill it in the fridge for about 10 minutes to make it easier to work with. After rolling, gently press down each ball to flatten them slightly; this helps them bake into that perfect cookie shape.

Bake

Place your cookie dough balls on the prepared baking sheet, leaving a little space between each one. This gives them room to spread without sticking together. Slide the baking sheet into the preheated oven and bake for 10 minutes, or until the edges are lightly golden. Don’t wait for the tops to brown too much these cookies are meant to be soft and cake-like!

Cool and Enjoy

After baking, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. They’ll be soft when they come out, so letting them cool slightly helps them set without breaking apart. Then transfer to a wire rack (if you have one) or let them cool completely on the pan. And that’s it time to enjoy your sprinkle-filled, soft, and cheerful Funfetti Cake Cookies!

Ingredients

  • 3/4 cup all-purpose flour (I used @bobsredmill gluten-free 1:1 baking flour)

  • 2/3 cup almond flour

  • 1/2 teaspoon baking powder

  • 1/2 cup cane sugar

  • 2 tablespoons almond milk

  • 1 egg

  • 3 tablespoons colorful sprinkles

Directions

  • Preheat your oven to 350°F (that’s about 180°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk the egg and almond milk together until it’s all smooth and happy.
  • Add the flours, baking powder, sugar, and sprinkles to the bowl. Stir everything together until it forms a soft dough.
  • Divide the dough into 10 equal pieces. Roll each piece into a ball, then gently flatten them with your hands.
  • Place them on your baking sheet, leaving a little space between each one so they don’t squish into each other while baking.
  • Bake for 10 minutes or until the edges look just slightly golden.
  • Let them cool (just a little!) and enjoy your sprinkle-filled cookies.

Notes

  • Don’t overmix the dough this can make your cookies tough. Just stir until everything is combined.
  • Keep an eye on the oven! Every oven bakes a little differently, so check your cookies around the 9-minute mark.
  • If the dough feels too sticky, you can pop it in the fridge for 10 minutes before rolling.

Serving Suggestions

These cookies are perfect all on their own, but if you want to make them even more special, try:

  • Dipping half in melted white chocolate
  • Sandwiching two cookies with ice cream in the middle
  • Adding extra sprinkles on top before baking
  • Enjoying with a glass of cold almond milk

Fun Fact

Did you know “Funfetti” was made popular by Pillsbury back in the 90s? It combines “fun” and “confetti” because of the colorful sprinkles that look like party confetti in your dessert!

Conclusion

These Funfetti Cake Cookies are such a blast to make and even more fun to eat! They’re colorful, soft, and simple enough that even beginner bakers can whip them up in no time. I love making these when I want something cheerful and quick. Let me know how yours turns out, and don’t forget to share a cookie with a friend!
