No-Bake Strawberry Ice Cream Sandwiches – Cool & Creamy

Who doesn’t love a good ice cream sandwich? Today, I’m sharing one of my absolute favorite sweet treats: Strawberry Ice Cream Sandwiches! They’re cool, fruity, creamy, and super easy to make. This is the kind of recipe that makes you feel like summer is just around the corner even if it’s not!

Whether you’re making these for a family picnic, a sleepover party, or just because, these sandwiches will bring big smiles to everyone’s faces. Let’s dive in!

Method

Get your dish ready

The first step is prepping your dish so everything goes smoothly later. Take an 8×8 inch baking dish and line it with parchment paper. This part is important because it makes removing the frozen sandwiches much easier when they’re ready. Once your dish is lined, place a layer of graham crackers at the bottom. Try to cover the whole base as evenly as possible. You may need to break a few crackers to fit perfectly into the corners, and that’s totally fine! Just make sure there aren’t any big gaps.

Make the magic mix

Now for the delicious part! Grab your blender and add 2 & 1/2 cups of vanilla ice cream along with 5 whole strawberries. Blend these together until you get a smooth, creamy strawberry-flavored ice cream. It’ll turn a lovely light pink color and smell amazing. Next, take the remaining 5 strawberries and chop them into small pieces. Gently stir these diced strawberries into the blended mixture using a spoon or spatula. This combo of blended and chunky strawberries gives your sandwiches a fresh and fruity texture that’s super satisfying in every bite.

Layer it up

Once your ice cream mixture is ready, pour it over the layer of graham crackers in your dish. Use your spatula to spread it out evenly all the way to the edges so every sandwich square will have the same delicious amount of ice cream inside. After smoothing it out, place another layer of graham crackers on top. Try to align them with the ones on the bottom so that when you slice the sandwiches later, they look neat and even.

Freeze it

This step requires a little patience! Carefully place the whole baking dish into the freezer. Let it freeze for at least 5 hours, but for the best results, I highly recommend leaving it overnight. Freezing it longer helps the ice cream set perfectly, which makes slicing so much easier and keeps the sandwiches nice and firm when served.

Slice & Serve

Once your ice cream layer is frozen solid, take the dish out of the freezer. Use the parchment paper to gently lift the whole block out of the pan and place it on a cutting board. Then, using a sharp knife, slice the block into 9 even squares or more if you want smaller servings! Serve immediately or wrap each sandwich in parchment and store them in the freezer until you’re ready to enjoy. They’re perfect for cooling down on a warm day or for surprising your guests with a homemade treat.

Ingredients

  • 2 & 1/2 cups vanilla ice cream (I used @tillamook vanilla!)

  • 10 strawberries (fresh is best!)

  • Graham crackers (I used @pamelasproducts gluten-free ones!)

Directions

  • Get your dish ready: Line your 8×8 baking dish with parchment paper. This makes it easy to pull out the sandwiches later. Then, place graham crackers on the bottom to cover the whole dish.
  • Make the magic mix: In a blender, combine your vanilla ice cream with 5 whole strawberries. Blend it until it’s smooth and creamy. Then dice the other 5 strawberries and stir them in. This gives you that perfect fruity texture!
  • Layer it up: Pour the strawberry ice cream mixture over your layer of graham crackers. Spread it out evenly. Then add more graham crackers on top to finish the sandwich look.
  • Freeze it: Pop the dish in the freezer for at least 5 hours but honestly, overnight works best! The longer it chills, the former and easier it is to slice.
  • Slice & Serve: Once frozen solid, lift out the parchment, cut the whole block into squares, and enjoy!

Notes

  • Don’t blend all the strawberries, keep some diced! The mix of smooth and chunky makes every bite amazing.
  • Make sure your ice cream is just soft enough to blend. If it’s too melted, your sandwiches might freeze unevenly.
  • Don’t skip the parchment paper; it makes removing the bars so much easier.
  • Be gentle when adding the top layer of crackers, so they stay straight and don’t sink.

Serving Suggestions

  • Add a drizzle of melted chocolate or white chocolate for extra sweetness.
  • Roll the edges in mini chocolate chips or sprinkles is super fun for kids!
  • Serve with fresh strawberry slices on the side.
  • Want it extra fancy? A dollop of whipped cream on top goes a long way!

Fun Fact

Did you know strawberries are actually part of the rose family? That’s why they smell so sweet and lovely just like a bouquet you can eat!

Conclusion

These strawberry ice cream sandwiches are a total win in my kitchen. They’re fun to make, pretty to look at, and most importantly super tasty. I love that they don’t need baking, just blending, layering, and a little patience while they freeze.

So grab some strawberries, scoop up some ice cream, and make this yummy treat today!
