If you love spicy, cheesy, and super yummy food, then you’re going to LOVE this Buffalo Chicken Dip! It’s warm, gooey, and perfect for dipping chips, crackers, or veggies. Plus, it’s packed with protein and super easy to make. I was inspired by @gatherednutrition and added my own little twist. This recipe is great for dinner, a snack, or even for a game day treat. Let’s dive in!
Method
Preheat the Oven
First things first preheat your oven to 400°F (200°C). It’s always a good idea to start heating the oven before you begin mixing ingredients so it’s ready to go when you are. This step ensures your dip bakes evenly and melts to gooey perfection.
Combine the Ingredients
Next, grab an oven-safe baking dish this is important because the dish will go straight from the counter into the oven. Into that dish, add your shredded chicken (I like using rotisserie chicken because it’s flavorful and ready to go), Greek yogurt for a creamy texture, and buffalo sauce for that spicy, tangy kick. Then sprinkle in your diced green onions, which add a pop of color and crunch. Finally, season everything with salt, pepper, garlic powder, and onion powder. Once everything is in the dish, use a spoon or spatula to mix it all up until everything is well blended and evenly coated with that delicious buffalo-yogurt sauce.
Add the Cheese Topping
Now it’s time for the cheesy layer, arguably the best part! Take your shredded mozzarella cheese and sprinkle it all over the top of the chicken mixture. Try to spread it out evenly so every bite gets that melty goodness once it bakes.
Bake the Dip
Place the dish in the preheated oven and bake it for 7 minutes. During this time, the dip will heat through, the flavors will blend, and the cheese will begin to melt. You’ll start to see everything get all bubbly and delicious.
Broil to Finish
After the initial bake, switch your oven to broil mode. Broiling helps the top layer of cheese get golden and a little crispy so good! Broil the dip for about 3 minutes, but keep a very close eye on it. Broilers heat from the top and can burn food quickly if left unattended. You’re looking for that perfect, lightly browned cheesy top.
Cool and Serve
Once it’s golden and bubbling, carefully remove the baking dish from the oven. Let it cool for about a minute or two just enough that you won’t burn your mouth! Now it’s time to dig in. Scoop, dip, or spread however you like, and enjoy every creamy, spicy, cheesy bite.
