Introduction
Hi friends! Today, I’m sharing one of my absolute favorite treats Chocolate Protein Dates! These are sweet, chewy, chocolatey, and packed with protein. They’re like little candy bars, but way healthier. The best part? You don’t even need to bake them! They’re super easy and perfect for after-school snacks, post-workout fuel, or a yummy dessert.
Method
Start with the Dates
First, grab your dates and make sure each one is pitted. Most store bought dates still have the pits inside, so gently slice each date down the middle lengthwise and remove the pit. Be careful not to cut all the way through you want the date to stay mostly whole so it can hold the filling like a little pocket.
Mix the Filling
In a mixing bowl, combine your creamy nut butter and pure maple syrup. Use a spoon or spatula to stir until the mixture is smooth and well blended. This step helps make the base rich and naturally sweet. Once that’s fully combined, gradually add in your vanilla protein powder. Stir well until a thick dough forms. The texture should be soft but not too sticky something you can easily roll into small balls with your hands.
Fill the Dates
Take a small scoop of the protein dough about a teaspoon or so and roll it into a little ball using your fingers. Gently press the ball into the open part of the date. The dough should fill the inside of the date neatly. Repeat this step for all your dates. You’ll end up with perfectly stuffed bites that are ready for the best part: the chocolate!
Dip in Chocolate
Next, melt your chocolate chips in a microwave-safe bowl. Microwave in short 20-second bursts, stirring after each time, to avoid burning the chocolate. Once it’s smooth and glossy, it’s ready to use. Dip each stuffed date into the melted chocolate so that the top half is coated. You can use a spoon to help drizzle the chocolate if dipping is tricky. Then place each one on a tray or plate lined with parchment paper so they don’t stick.
Chill Them
Once all the dates are dipped and placed on your tray, put the tray in the refrigerator for about 10 to 15 minutes. This will allow the chocolate coating to set and harden beautifully. If you’re in a hurry, you can even pop them into the freezer for a few minutes to speed things up.
Eat and Enjoy
Once the chocolate is firm, your Chocolate Protein Dates are ready to enjoy! They’re delicious when chilled, but they also taste amazing at room temperature. Store any leftovers in an airtight container in the fridge, and snack on them whenever you need a little boost of energy or a healthy treat.
