Easy GF Coffee Cake Donuts – Quick & Delicious Breakfast

Hey there, donut lovers! If you’re a fan of soft, sweet donuts and the cozy flavor of coffee cake, then you’re going to love these gluten-free coffee cake donuts. They’ve got the perfect mix of warm cinnamon, a fluffy texture, and a crumbly topping that makes each bite extra special. Oh, and guess what? They’re also super easy to make no mixer needed!

Let’s dive in!

Method

Prepping the Oven and Donut Pan

To get started, preheat your oven to 350°F (175°C). While the oven is heating, take your donut pan and lightly grease it with oil or nonstick spray. This helps the donuts slide out easily after baking, so don’t skip this step! A nonstick donut pan works best, but greasing is still important even if your pan claims to be nonstick.

Mixing the Batter

In a large mixing bowl, crack the egg and pour in the milk, whisking them together until they’re fully combined and smooth. This helps give your donuts a nice, even texture. Once the wet ingredients are mixed, it’s time to add the dry ingredients: almond flour, gluten-free all-purpose flour, baking powder, sugar (coconut sugar, if you’re using that), and cinnamon. Gently whisk or stir everything together just until the mixture is combined. Be careful not to overmix the batter should be smooth, but a few small lumps are okay. Overmixing can make your donuts dense instead of soft and fluffy.

Filling the Donut Pan

Next, it’s time to fill your pan! If you have a piping bag, fill it with the batter and pipe it into the donut molds until each one is about 3/4 full. This keeps things neat and helps the donuts bake evenly. If you don’t have a piping bag, no worries just use a spoon to gently spoon the batter into each donut well. The batter should make exactly six donuts.

Making the Crumb Topping

In a separate small bowl, make the crumb topping by combining the gluten-free all-purpose flour, sugar, cinnamon, and milk. Stir the mixture until it becomes thick and slightly crumbly this is the part that gives the donuts that yummy coffee cake texture on top. Once it’s ready, sprinkle a little of the crumb topping over each donut, pressing it in very lightly so it stays in place while baking.

Baking the Donuts

Now for the fun part baking! Carefully place the donut pan in your preheated oven and bake for 12 minutes. When they’re done, the donuts should look golden and spring back slightly when touched. You can also insert a toothpick into one if it comes out clean, they’re ready!

Cooling and Finishing Touches

Once the donuts are done baking, let them cool in the pan for about 5–10 minutes. This step is super important removing them too early could cause them to fall apart. After they’ve cooled a bit, gently pop them out of the pan and let them cool completely on a wire rack. If you want to go the extra mile, you can drizzle them with your favorite frosting or glaze totally optional, but super delicious.

Ingredients

  • Batter

  • 2/3 cup almond flour

  • 3/4 cup gluten-free all-purpose flour (I used Bob’s Red Mill 1:1 Baking Flour)

  • 1/2 tsp baking powder

  • 1/2 cup granulated sugar (I used coconut sugar)

  • 1 tsp cinnamon

  • 1/2 cup milk

  • 1 egg

  • Crumb Topping

  • 1/3 cup gluten-free all-purpose flour

  • 2 tbsp granulated sugar

  • 1/2 tsp cinnamon

  • 5 tsp milk

Directions

  • Preheat your oven to 350°F and grease your donut pan with a little oil or nonstick spray.
  • In a big bowl, whisk together the milk and egg. Then, stir in all the dry batter ingredients until smooth.
  • Use a piping bag (or spoon) to fill the donut pan with your batter it should make exactly 6 donuts.
  • In a small bowl, mix your crumb topping ingredients together. It’ll be thick and crumbly just how we like it!
  • Sprinkle the topping on each donut evenly
  • Bake in the oven for 12 minutes until they’re golden and cooked through.
  • Let them cool, gently remove from the pan, and if you’d like drizzle with your favorite frosting. Yum!

Notes

  • Don’t overmix your batter, just stir until everything is combined. Overmixing can make the donuts dense.
  • Use a piping bag if you can. It’s much easier (and cleaner!) to fill the donut pan.
  • Let the donuts cool completely before removing them from the pan. If you take them out too early, they might break.

Serving Suggestions

These donuts are perfect with:

  • A cup of tea or coffee
  • A glass of cold almond milk
  • Fresh fruit on the side
  • A cozy morning in your pajamas!

Try warming one in the microwave for 10 seconds for a fresh-baked feel.

Fun Fact

Did you know? Coffee cake doesn’t actually have coffee in it (most of the time)! It’s named that way because it’s meant to be eaten with coffee. These donuts follow the same rule they’re sweet, cinnamony, and perfect for snack time.
