If you’ve ever wished you could eat one giant Pop-Tart instead of two little ones, your dreams are about to come true! Today, I’m sharing my super fun and easy recipe for a GIANT gluten-free Pop-Tart. It’s filled with sweet jam, topped with sprinkles, and made with simple ingredients perfect for breakfast or a fun dessert treat!
Let’s jump into the magic of making this gluten-free masterpiece together!
Method
Get Ready
First things first preheat your oven to 350°F (175°C). This gives the oven enough time to reach the perfect baking temperature while you prepare your Pop-Tart. Then, grab a baking sheet and line it with parchment paper. This will keep your Pop-Tart from sticking and make cleanup super easy later.
Make the Dough
In a large mixing bowl, combine your gluten-free flour, baking powder, and salt. Stir everything together until it’s evenly mixed. Next, add the Greek yogurt to the dry mixture. At first, use a spoon or spatula to start blending it in, but don’t be afraid to use your hands when the dough starts to come together it’s the best way to get a smooth, well-combined dough. The dough should be soft but not too sticky. If it feels too wet, you can add a small sprinkle of flour until it feels just right.
Roll It Out
Now that your dough is ready, divide it into two equal portions. Place each one on a separate sheet of parchment paper. Using a rolling pin, roll each portion into a rectangle shape, around 1/4 inch thick. Try to make the two rectangles about the same size because they’ll be stacked to make the Pop-Tart. If your dough is sticking to the rolling pin, you can lightly flour it or place another sheet of parchment on top while rolling.
Assemble the Pop-Tart
Take one of the rolled-out rectangles and carefully move it onto your prepared baking sheet. This will be the bottom layer of your giant Pop-Tart. Spoon your favorite jam or jelly onto the center of the dough, spreading it evenly and leaving about half an inch of space around the edges so it doesn’t ooze out. Once your filling is spread, gently place the second rectangle on top. Press the edges down gently with your fingers to seal the Pop-Tart, then use a fork to crimp all around the edges. This gives it that classic Pop-Tart look and helps keep all that delicious filling inside while baking.
Bake & Cool
Slide your baking sheet into the preheated oven and bake for about 35 minutes, or until the crust is a light golden brown. Keep an eye on it toward the end every oven is a little different! Once it’s done, take it out of the oven and let it cool completely on the pan. This is important because if you try to add icing while it’s still warm, the frosting will melt and run off instead of sitting nicely on top.
Decorate & Serve
To make the icing, mix some powdered sugar with just a little splash of water in a small bowl until it turns into a smooth glaze. You can adjust the thickness by adding more sugar if it’s too runny, or more water if it’s too thick. Once your Pop-Tart is completely cool, drizzle the icing across the top using a spoon. Then comes the fun part sprinkles! Add as many as you like to make it colorful and fun. Now, slice it into big squares and serve it up!

minutesIngredients
1 & 3/4 cups all-purpose gluten-free flour (I used Bob’s Red Mill 1:1 Baking Flour)
2 teaspoons baking powder
1/4 teaspoon salt
1 & 1/4 cups plain Greek yogurt
3/4 cup of your favorite jam or jelly
Sprinkles (for topping!)
Powdered sugar + water (for frosting drizzle)
Directions
- Get Ready: Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Make the Dough: In your mixing bowl, stir together the flour, baking powder, and salt. Add in the Greek yogurt and mix everything together. You might need to use your hands at the end to bring the dough fully together it’s a little messy but fun!
- Roll It Out: Split the dough in half. Roll out each half into a rectangle on a piece of parchment paper. One will be the bottom crust, and the other will be the top.
- Assemble the Pop-Tart: Place one rectangle on the baking sheet. Spread jam all over it, leaving a small edge around the sides. Place the second rectangle on top and gently press the edges to seal. Use a fork to press around the edges this makes it look just like a Pop-Tart!
- Bake & Cool: Bake for 35 minutes or until lightly golden. Let it cool completely before decorating.
- Decorate & Serve: Mix powdered sugar with a splash of water to make a simple icing. Drizzle over the cooled Pop-Tart and add sprinkles. Now slice and enjoy!
Notes
- Make sure your dough isn’t too sticky or too dry add a tiny bit more flour or yogurt if needed while mixing.
- Roll out your dough evenly so it cooks the same on all sides.
- Don’t overfill with jam or it might leak out while baking. A nice, even layer works best!
- Let it cool before icing, or your frosting will melt right off!
