Single-Serve Blueberry Muffin – Healthy & Quick Homemade Treat

Do you ever get a craving for something sweet and homemade, but don’t want to bake a whole batch? That’s exactly why I love this Single Serve Blueberry Muffin! It’s soft, fruity, and just the right size for one person. Whether you’re a student looking for a quick snack or someone who wants a cozy treat with their morning coffee this muffin is calling your name.

Method

Preheating the Oven

Start by preheating your oven to 350°F (175°C). This step is essential because a properly preheated oven ensures even baking, giving your muffin a nice, golden top and a perfectly moist interior. While the oven heats up, you can prep your ingredients and tools, so everything is ready to go.

Preparing the Ramekin

Take a 10–12 oz oven-safe ramekin or small bowl and grease it lightly with cooking spray or a touch of oil. This will help prevent the muffin from sticking to the dish after baking, making cleanup easier and ensuring you can enjoy every last bite straight from the ramekin.

3. Blending the Batter

In a high-powered blender, combine all of your ingredients except the blueberries:

  • 1/3 cup rolled oats
  • 1/4 teaspoon baking powder
  • 2 tablespoons granulated sugar (like coconut sugar)
  • 1/4 cup milk (such as oat milk)
  • 1 egg

Blend the mixture just until smooth. The oats will break down and form a thick, cake-like batter. Be careful not to over-blend doing so can overwork the oats and make the final muffin texture a bit gummy. You’re aiming for a smooth, pourable consistency, similar to pancake batter.

Folding in the Blueberries

Once the batter is ready, transfer it to a mixing bowl (or simply remove the blender blade, if possible) and gently fold in 2–3 tablespoons of blueberries. Do not blend them! Keeping the blueberries whole adds bursts of juicy flavor throughout the muffin. If you’re using frozen blueberries, it helps to toss them in a little flour first. This keeps them from sinking to the bottom of the muffin as it bakes.

Pouring and Baking

Pour the batter into your greased ramekin, spreading it evenly. Place it in the preheated oven and bake for about 28 minutes. Ovens can vary, so start checking around the 25-minute mark. The muffin is done when the top looks golden brown and a toothpick inserted in the center comes out clean or with just a few moist crumbs.

Cooling and Serving

After baking, remove the ramekin from the oven and let the muffin cool for a few minutes. This helps it set and also keeps you from burning your mouth on that first delicious bite. Enjoy it warm, straight from the ramekin with a spoon. You can also dress it up with a dollop of yogurt, a dusting of cinnamon, or even a drizzle of honey if you’re feeling fancy!

Ingredients

  • 1/3 cup rolled oats

  • 1/4 teaspoon baking powder

  • 2 tablespoons granulated sugar (I used coconut sugar)

  • 1/4 cup milk (I used oat milk)

  • 1 egg

  • 2–3 tablespoons blueberries

Directions

  • Preheat your oven to 350°F (that’s when the oven gets nice and hot so your muffin can bake perfectly).
  • Grease your ramekin with cooking spray or a little oil so the muffin doesn’t stick.
  • Blend all the ingredients (except the blueberries) in a high-powered blender until smooth.
  • Gently fold in the blueberries. Don’t blend them! We want juicy blueberry bites in each bite.
  • Pour the batter into your ramekin.
  • Bake for about 28 minutes or until the top looks golden and a toothpick comes out clean.
  • Let it cool for a few minutes, grab a spoon, and enjoy your warm muffin straight from the dish!

Notes

  • Don’t over-blend the oats! Just blend until smooth too much blending can make the batter gummy.
  • Make sure your ramekin is oven-safe plastic or non oven safe bowls can melt.
  • If using frozen blueberries, roll them in a little flour first to keep them from sinking to the bottom.
  • Keep an eye on the baking time every oven is a bit different. The top should be golden, not burned.

Serving Suggestions

  • Add a dollop of yogurt or whipped cream on top.
  • Sprinkle with a little extra coconut sugar or cinnamon.
  • Try it with a glass of cold milk or a warm mug of tea.
  • Want more texture? Toss in a few chopped nuts or seeds before baking!

Fun Fact

Did you know that blueberries are one of the only naturally blue foods in the world? They’re also packed with antioxidants, which are like little superheroes that help keep your body healthy!
